Actually, it is to take down society. Fight club is the name of the club that fist fights, Project Mayhem is taking down society. Which is why there is as huge explosion at the end.

The obvious was the underground fight club, but I am not enough of a Brad Pitt fan to have realized the show might have had a plot as well.
